This morning I made Runner Bagel's!

1/8th cup (2 tbs) of yeast

1 cup of warm water

8 egg yolks

4 cups of flour

1 tbs of salt

Salt and Sesame Seeds or Everything Bagel seasoning for coating!

Water and baking soda for boiling the dough before baking.

Preheat 400!

I mixed 1/8th cup (2 tbs) of yeast with 1 cup of warm water and let the mixture sit for 5 minutes until bubbly. Then, I combined 4 cups of flour with 1 teaspoon of salt.

I separated 8 eggs and used 8 egg yolks for this recipe. So it is like 2 eggs per cup of flour. You can make as much as you want, but this recipe made 6 bagels or 12 mini bagels.

and the whites for omelets. Finally, I combined all ingredients into my Kitchen Aide and mixed the dough on low for five minutes. Mix until the dough is completely off the sides.

Let the dough rise for atleast 2 hours!

I formed six balls and made a whole in the middle. Afterwards, I added the doughy bagels to boiling water combined with a cup of baking soda. Once the bagels were floating I placed them onto a baking sheet. Upon being placed on the baking sheets, I coated the bagels in salt and sesame seeds!

The bagels baked on 400 degrees until golden brown, and were a delicious healthful treat for my family and friends.

After my 20 mile run yesterday, I decided to do an easy five mile shake out today! Tomorrow I will do my 10 in the morning and 10 at night. So far so good, a little over 50 miles this week so far. I do French weeks for training, it all starts on Monday for me. Monday was 20, Tuesday was 10, Wednesday was 20, today was 5, and hopefully all those sweet miles keep coming! ๐Ÿ˜˜

Today, I did a smooth 20 miles in a row! Yes, I tried a vlog with it all, but I look pretty gross and you might hear my gum chewing and footsteps and breathing a lot of the time. So far, I am a happy woman hopping back into real training after my sabbatical. ๐Ÿ˜„

I just bought this smart watch on amazon, to try it out.  I have not plugged it into my laptop to sync the time or switch kilometers to miles.  However, being a mathematician I am impartial to the metric system and the GPS works so that's all that matters.  20 was closer to 22 today which is fine, and I am not trying to kill my ego looking at the four hours it took me so I crossed it out. ๐Ÿ˜˜

My morning run went pretty well! I made a video, and hopefully tonight I will be right back at it. ๐Ÿ˜Š

After completing a marathon for the very first time, a runner may feel that they are the best athlete of all time.  Every step, every breath, and the form of each stride has a purpose.  The tantalizing sensation of every nerve coming off each muscle, such horrific pain those last few miles it seems like a miracle to be able to move on race pace.  Debating whether the muscles are ripping from bone, speeding up and closing in on the finish, whilst looking fiercely into the horizon.  In the moment that a medal is placed around your neck, the pain is overtaken with a blissful numb coming down from excruciation after running an entire twenty-six-point-two miles.

Am I dramatic?! Well, perhaps. It is so tempting to try to run an even bigger distance or turn into an ironman triathlete after doing some marathons, but there is something special about being proficient in one thing. I think that I really found my groove with the marathon distance. After years of practice, I can finally speed up twenty miles in with negative split times. My coach always tells me I am going to do my dream marathon time, and I am going to reach it with negative splits. My endurance is so much better at 26 than it was at 18, and I just know my body can run that extra time faster which I literally thought was impossible back in the day. You want to run it fast fast fast, at a young age, but marathonerโ€™s are like a fine red wine and become richer with age for sure. One of the coolest feelings as an athlete, is finally filling in a gap that once seemed impossible. For me that gap has been both times and distances, once gaps are filled there is always still room for growth. Sometimes, a huge accomplishment can be running slow or shorter distances too. Running is full of surprises.

This round of training, I am really going to try and vlog more often than I typically have through the years. Hopefully, being more adamant and committed to the vlog portion, will help me take all of my readers/followers by the hand to my race weekends the next couple years. Sometimes, it is hard to vlog and run at the same time, but I will totally find the balance and make this a better thing. To be social, I am looking to throw several interviews on my blog. This year was funny for me with virtual races and my back surgery putting me out for a few months, now that I get to โ€˜be me againโ€™ my content will come alive. This girl is coming back to life so to speak. Everyone lather on the sunblock for some sweet summer running.
